Snowball Biscuits


Ingredients (makes around 12)

250g Butter
1/2 Cup of sugar
1/2 Cup of syrup
1/4 Cup of milk
1 Teaspoon of vanilla essence
2 1/2 Cups of flour
750g Packet of ready-to-roll icing
2 Cups shredded of coconut

Preheat oven to 150 Celsius. Soften the butter, add all but the flour and mix well. Add the flour and take small quantities then roll the dough into 12 equal balls. Place on baking paper on baking trays and bake for 25 minutes or until just golden. Once cool, coat with icing by taking small chunks of icing and gently pushing it onto the biscuit, or roll the icing flat and wrap them. Roll them in the coconut and press them gently in your hand to make the coconut stay. Enjoy!
